I am what you would call 'Mac stupid' and don't know too much about it. However, if you are uninstalling all Java (are you sure???) the only things that could be causing you grief (as far as Java goes) are:

  1. Old Java plugin(s) installed in Safari
  2. Java Control Panel has information about old versions.

Run the JCP app and make sure ALL versions of Java are removed if you are not running them. JCP on most platforms (again, Mac stupid here) have a 'default' setting. No idea why it runs differently on all platforms, but if there is a version here it will be called by default if a specific version is not requested by the application. The JREs listed here will show a path to the executable machine -- make sure these are entirely removed and the directories have been deleted. Go into your plugins/extensions in Safari and remove ALL Java plugins. Then, uninstall Java, and make sure the entire Java directory is removed.

Bash will still be available, but Apple is signaling that developers should on macOS Mojave or earlier in anticipation of bash eventually going away in macOS.Apple hasn’t explained exactly why it’s making this change, but bash isn’t exactly a modern shell as it’s implemented in macOS, and a switch to something less aging makes a lot more sense for the company. Reinstall the Java version you want. Run the JCP for that version and make sure everything still looks OK. Install the Java plugin in Safari. Restart Safari, and verify the version at https://www.java.com/verify
