I am what you would call 'Mac stupid' and don't know too much about it. However, if you are uninstalling all Java (are you sure???) the only things that could be causing you grief (as far as Java goes) are:

  1. Old Java plugin(s) installed in Safari
  2. Java Control Panel has information about old versions.

No idea why it runs differently on all platforms, but if there is a version here it will be called by default if a specific version is not requested by the application. The JREs listed here will show a path to the executable machine -- make sure these are entirely removed and the directories have been deleted. Go into your plugins/extensions in Safari and remove ALL Java plugins. Then, uninstall Java, and make sure the entire Java directory is removed.
